Neiman-Marcus Chicken Casserole

Neiman-Marcus. The name itself evokes a sense of luxury, exclusivity, and impeccable customer service. And if you have ever dined in one of their restaurants or cafes, you know the same can be said for their food and service. I was browsing one of their cookbooks and came across a recipe that is too easy to be as delicious as it is – Neiman-Marcus Chicken Casserole. Add a small side salad or vegetable, and it is a complete meal. I tweaked the recipe slightly to my own taste and this is how I made it.

In a medium bowl, crush 1 sleeve of Ritz crackers (about 32 crackers) and mix with 4 tablespoons of melted butter. In a large bowl, combine a can of cream of celery soup and 1 cup of sour cream. Add 2 cups of shredded Vermont extra sharp white cheddar cheese, 3 thinly sliced green onions, ½ cup of toasted slivered almonds, 6 slices of bacon cut into lardons and sautéed, and 4 cups of diced cooked chicken. Mix well and spread into a 9 x 13 baking dish that has been sprayed with cooking spray. Sprinkle the cracker crumbs over the chicken mixture. Pop into a preheated 350-degree oven and bake for 30 minutes or until the topping is golden and the casserole is bubbling. Allow to cool for 5 minutes before serving.

Neiman’s did a good thing. This is so good. Your guests will love it.
