The Duke of Windsor Sandwich

I ran across a recipe that Helen Corbitt – a Texas culinary maven – created for Edward, the Duke of Windsor when he visited Dallas. As you know, the Duke later became King Edward the Eighth and abdicated the throne. But his namesake sandwich reigns on. I decided to make it as a panini. If you do not have a panini press, you can still make the sandwich, and I will show you how below.

First, place two rings of canned pineapple slices on a well sprayed baking sheet and pop into a preheated 350-degree oven for 25 minutes until the pineapple is dry and just beginning to brown. Take out of the oven and allow to cool slightly.

While the panini press is heating, lay two slices of egg bread (Brioche, Challah) on a clean board. You can use other breads, but I think egg bread is best for this sandwich. Spread 1 – 2 tablespoons of room-temperature butter on each slice. Turn the bread over and place 1 slice of aged white cheddar cheese. Top with about 2 ounces of smoked turkey. Cut the pineapple rings in half and fit them on the turkey. Top with another 2 ounces of turkey. Spread 1 tablespoon of orange marmalade on the other slice of bread (the original recipe called for mango chutney, but my store did not carry it), then top the sandwich with this slice – marmalade facing down.

When the panini press is heated, add the sandwich and cook for 2 – 3 minutes or according to your press’ instructions. The bread should be toasted and the cheese melted. Remove from the press and cool for 2 minutes before slicing.

If you do not have a panini press, heat an oven-safe skillet on the stove (cast iron works well) and add the sandwich. Toast on both sides then pop into a pre-heated 350-degree oven for 4-5 minutes until the cheese is melted.

This sandwich is so good and unique. I love the combination of smoked turkey, pineapple, and orange marmalade. Enjoy!
