Fall has arrived here in the foothills of the Blue Ridge mountains and the weather is beautiful. During this time of year, I always think of the autumn fruits and vegetables that are at their best: wild mushrooms, squash, pumpkin, eggplant, pears, figs, cranberries. And apples. I enjoy apples in any form and use them in cakes, pies, and toppings. I was happy to see that USA Today listed Mercier Orchards in Blue Ridge GA as the second-best orchard for picking apples in the country! So, for our Sunday brunch, I decided to prepare a take on Bananas Foster (which is one of my favorite desserts) using apples.
Apples Foster Waffles is easy and quick to prepare and so delicious. For the waffles, you can use whatever waffle mix you like. I prefer crispy waffles and previously posted a waffle recipe which you can find here. While the waffles cook, you can make the Apples Foster topping. Here is how I prepare it for 2 people.
Melt ½ stick of unsalted butter in a non-stick pan. When the butter has melted and begins to foam, add ½ cup of brown sugar, 1 teaspoon of cinnamon, a pinch of salt and 1 peeled, cored and chopped apple. I used a Granny Smith apple but Honeycrisps or Braeburns would be good too. Just make sure you use a firm, crisp tart apple. Cook over low heat until the apples become fork tender stirring occasionally, about 10 minutes. Off the heat, add a splash of dark rum. I like to ignite the mixture with a match because I like that drama but that is optional. Stir until the flames subside and serve over your waffle.
