I love Sunday brunch at home. I usually prepare something special to eat or duplicate something we might have if we went out to an upscale bistro. We start out listening to opera music at a high volume and enjoy a Bloody Mary. Then we move on to another libation that David has created as I am preparing brunch. Often, that libation involves champagne.
I love a simple glass of champagne. I also love the many drinks you can make with champagne. Who has not had a Mimosa whether at a brunch or shower or some other party? We have also served champagne with different juices including cranberry, pomegranate and peach nectar which is known as a Bellini. But the following two champagne cocktails are likely my favorite.
Cognac French 75
The French 75 is named for the fast-firing 75-millimeter field gun that was used by the French during World War I. Although its origin is a bit of a mystery, it first found its way into the hands of discerning drinkers in 1927 during Prohibition. The original drink consists of gin, but we added our on twist and used Cognac instead. Here is how we make it for 2 people.
Into a shaker with ice, add 2 ounces of Cognac, ½ ounce of freshly squeezed lemon juice and ½ ounce of simple syrup. Shake well and divide between two champagne flutes. Top with champagne and garnish with a lemon peel.
Champagne Cocktail
I heard about Champagne Cocktails for years before I finally tried it. I thought it sounded so exotic and classy. It could not be simpler. Into a champagne flute, drop a sugar cube. Add 6 – 8 drops of orange bitters and squeeze a lemon peel in to release the oils. Top the flute off with champagne. The way the sugar cube fizzles is enchanting.
