Cherry Brownie Sundae

My sister loves cherries. She was coming for dinner, and I wanted to make a special dessert for her, so I decided to make a Cherry Brownie Sundae. It is dramatic, delicious, and easy to make. The brownies are chocolaty, moist and have cherries in them. The ice cream is rich, creamy, and velvety. And the cherry sauce is made with sweet cherries and adds the perfect touch. Here is how I put it together.

The base is a cherry brownie. With dried cherries, these brownies are the best chocolaty and buttery brownies. It is easy to make from scratch, much better than a box mix, and you probably have most of the ingredients in your pantry. I posted the recipe previously and you can find it  here.

Next comes the ice cream. Homemade ice cream is better – and typically less expensive – than store bought so I use my counter-top ice cream maker. If you do not have one, I strongly recommend you buy one. I think you will enjoy making ice cream in it and love the end results. Otherwise, you can always use store bought vanilla ice cream.

Finally, the cherry sauce. This is such an easy sauce to make. And besides desserts, you could use it on pork, chicken on whatever you like. In a medium saucepan, whisk together ¼ cup of water, 2 teaspoons of cornstarch and 2 teaspoons of lemon juice. Heat over medium heat whisking constantly until the mixture thickens. Then add 2 cups of frozen dark sweet cherries. Stir occasionally with a wooden spoon and allow to come to a light boil all over (not just around the rim). Remove from the heat and stir in a splash of brandy or cognac. Allow to cool to room temperature; it will thicken as it cools.

To assemble, place a brownie on a plate, then a scoop of vanilla ice cream and then ladle on the cherry sauce. And that is all there is to it. I hope you will try it and enjoy it as much as my sister did. It is delicious!
