It used to be that May was strawberry month. I remember heading out to the strawberry patch with my Grandmother to pick strawberries. She would make homemade Strawberry Shortcake but her favorite way to eat them was sliced in a bowl with a little cream. Thankfully, we can get strawberries year-round now. Yet, I always think of strawberries in May and recipes I can use to showcase these fruity, sweet, and juicy red berries.
This is an easy appetizer that will do just that – Crostini with goat cheese, strawberries, and a balsamic glaze. First make the crostini. Cut 12 slices of a French baguette on the diagonal and place on a sheet pan lined with aluminum foil. Brush both sides with olive oil and sprinkle a little salt on one side. Pop in a 400-degree pre-heated oven for 12 – 15 minutes. Turn the bread slices over and cook for 3 – 5 minutes longer watching to make sure the bread does not burn. Remove from the oven and cool on a rack. Once cooled, spread the crostini with herbed goat cheese and place 3-4 sliced strawberries on top. Just before serving, drizzle balsamic glaze over the crostini. I use store bought balsamic glaze – it is a bit pricey but last forever and is SO good.
And that is it. I served this recently at a luncheon for 6 people and they LOVED it. The only think easier than this is my grandmother’s favorite way to eat strawberries. Enjoy!
