Nothing has as strong of a southern drawl as a biscuit. Making biscuits really is a case of ‘practice makes perfect.’ And after an incredible amount of time and experience, I believe my biscuits can satisfy the most discerning Southerner’s taste buds. However, these Mini Cheddar Drop Biscuits are easy, delicious, and come out perfect every time. So, if you have not mastered the perfect southern biscuit yet, here is a great substitute. This recipe will make about 18 mini biscuits.
In a large mixing bowl, whisk together 1 cup of flour, 1 teaspoon of baking powder, ¼ teaspoon of baking soda, 1 teaspoon of kosher salt and a few grinds of black pepper. Add 4 tablespoons of cold, diced, unsalted butter and mix with your fingertips until it resembles a coarse meal. Stir in a heaping cup of shredded extra sharp cheddar cheese. Then add ½ cup of buttermilk and a few dashes of hot sauce. Stir until just combined.
Onto a parchment paper-lined baking sheet, drop tablespoon-sized portions of the dough making sure to space them evenly apart. You should get about 18 biscuits. Pop into a preheated 425-degree oven and bake for 12 – 15 minutes. You will want to serve these warm from the oven.
I have also made these biscuits adding diced bacon bits, chopped fresh chives (not dried), and finely chopped green onions. Either way you choose, they are delicious and addictive. Enjoy!
