Chicken and waffles have been around since colonial days. The soul-food version using fried chicken grew in popularity after the opening of the Wells Supper Club in Harlem 1938 and has become popular in the South. This mini version is more of an idea than a recipe and is a perfect snack – especially for game day – and only has 3 ingredients, 2 of which are from the freezer. Here is how I make it.
Prepare frozen chicken nuggets according to the package directions. While they cook, prepare frozen mini waffles in the toaster. Warm Red Pepper Jelly in a small bowl in the microwave in 15 second intervals until it is pourable. You could use warmed maple syrup, but I think the jelly adds a more interesting flavor.
Place a toasted mini waffle on a platter. On top of each, place a chicken nugget. If the nugget is too big, cut it in half. Spoon about a teaspoon of the jelly on top and stick a small skewer all the way through.
That is it! SO EASY. And a different snack to serve to your sports fans. Enjoy!
