Unicorn Deviled Eggs

I love deviled eggs. And I think they make a perfect appetizer for a luncheon or brunch. When I was planning my sister’s birthday luncheon the week before Easter, I wanted to serve deviled eggs with a special twist. So, I came up with Unicorn Deviled Eggs. They are decorated with a rainbow of colors and sparkly gold ‘fairy dust’ and look magical! They were a HUGE hit. Here is how I made them.

Place eggs in a pot and cover completely with water. Bring to a boil, cover the pot, turn off the heat and allow to sit for 20 minutes. Rinse the eggs under cold water and peel. Cut the eggs in half and remove the yolks to a small bowl. Make sure no yolk bits are in the whites.

Into 4 small bowls or cups, add 1 cup of water and 2 tablespoons of white vinegar. Stir in different colors of gel food coloring (and as many drops as you desire) into each bowl. Drop the egg whites into each bowl and leave until they turn your desired color which will only take a few minutes. Be as creative as you like, dipping some into several different colors.

Remove the whites with a slotted spoon and place on paper towels to dry with the ‘yolk hole’ facing down. Sprinkle edible gold dust (readily available online) on the backs. While they dry, prepare the yolk mixture using your favorite deviled egg recipe and place in a piping bag. When the whites are dry, arrange on a platter and fill with the yolk mixture. Sprinkle a little more edible gold dust and VOILA!

We had so much fun eating these, especially seeing the gold flakes left on everyone’s lips! I hope you’ll give this a try. Enjoy.
